CHOCOLATE CHIP AMARETTO MUFFINS

There was a time when I provided baked goods to a grocery store in a little Vermont village. These muffins were the best selling of everything I baked, including individual apple pies and chocolate chip cookies. I devised this recipe because I like the flavor of amaretto and wondered if I could use it in muffins. I liked the first batch but wanted something else in the muffins, so I tried chocolate chips in the next batch and they were great!  Obviously, others felt the same way - much to my surprise, I might add. So if you like the flavor of amaretto, you'll love these muffins.

2 cups flour

1/3 cup sugar

3 teaspoons baking powder

1 egg

1/2 cup milk

1/2 cup liquid amaretto coffee creamer

1/4 cup baking oil

1/2 cup chocolate chips

Mix the first 3 dry ingredients in a bowl.

In another bowl beat the next 4 ingredients.

Combine the dry with the moist ingredients and beat until smooth.

Stir in the chocolate chips.

Spray a muffin tin with Pam or line the cups with baking papers.

Divide this muffin mixture into the twelve cups.

Bake at 350 degrees for 20 to 30 minutes, until golden.

 

WINTERTIME GINGER COOKIES

These were my best selling cookies, more than chocolate chip or sugar cookies. I named them Wintertime because I crave ginger in the winter and developed this recipe to my own taste after trying many others.

1 cup sugar

2 cups flour

2 teaspoons baking soda

1 tablespoon ground ginger

1 teaspoon cinnamon

3/4 cup oil

1 egg

1/4 cup molasses

Combine the first 5 ingredients, the dry ones.

In a separate bowl combine the last 3 ingredients, the wet ones, and beat well.

Pour the moist mixture into the dry and beat. It will be a thick dough.

Take a tablespoonful of this dough and roll it in your hands to form a ball. Place on a lightly greased cookie sheet. Roll all of the dough and fill the cookie sheet.

Using the back of a fork, press down on each ball, making a design.

Bake at 350 degrees for 15 to 20 minutes

You can sprinkle the tops with sugar after baking if you'd like to.

And if you don't want to take the time to roll each cookie, you can drop the dough by spoonfuls onto the cookie sheet and flatten with a fork. The cookies aren't quite as matched but they taste just as good this way.
